Tomatoes taste even better when they’re roasted. Season with salt and pepper, drizzle lightly with olive oil and add few cloves of unpeeled garlic. Roast at 225C for 2 hours (depending on your oven and how dry you want your tomatoes). They also work with regular size tomatoes (not cherry tomatoes as shown in picture) but just less sweet. Perfect little snacks or add it to a salad or pasta.
